I would go Velcro myself. Easier on and off than laces so for gym climbing they rock. also easy at the crag to slip off between pitches if needed. The lace up shoes tend to be high performance too like the Anasazi lace up and the Muira. Reason being, you can get your foot into a smaller shoe and do it up tighter when you can lace it all the way down. Also, it is important to note the flexibility in tightening them. You can have them loose around your arch if you have a high one, and tighter around the toes if your feet are narrow etc.
That being said, there are some great all around shoes that are lace ups., the Five Ten Spires being one of them.
Like Fred said, the saphires are a ladies shoe, though some men have had great success with them, though if you have a wide foot, I doubt you will find they fit you.
