One advice is beware the black flies. A lot of crags in Québec are north of the St-Laurent and are full of 'em this time of year. You might get lucky.
If it wasn't late May I'd suggest Lac Long which has trad, mix and sport, has camping at the crag and a free complete online topo on dr topo (Si tu parles français). I Have always wanted to go there but never been. Heard only good things. I heard from a friend that the Laurentides north of Montreal (Val-David, Montagne d'Argent) are untolerable right now (think thick humid inland forests) but this is hearsay. Watkins is your best friend there!
Orford where I used to climb when I lived in PQ is seasonally closed because of falcons or will be very soon.
